Ice Cream Fake-Out


Ingredients:
4 Tbs. flax seed oil
8 Tbs. cottage cheese
3 tsp. unsweetened cocoa
1/4 tsp. peppermint oil
2 Tbs. sugar-free french vanilla creamer
1/4 cup milk
ice cubes


Preparation:
1. Combine flax oil, cottage cheese and milk in blender. Blend until smooth.
2. Add remaining ingredients, blend until consistency of an ice cream shake. Add ice cubes and/or milk to achieve desired consistency.

Outcome:
I love sweets. I love ice cream. I love this recipe!
The one thing I have had trouble giving up is ice cream. I came up with this recipe by accident. One day while making a smoothie variation of the basic Budwig recipe (see video on right), I added too much ice and noticed the result looked and tasted like an ice cream shake. A light bulb went off and I tried adding cocoa and peppermint. A few tries later and I settled on this recipe.
Of course you can try flavoring this "ice cream" as you like. Maybe peanut or almond butter. Butterscotch flavoring would also work well. Look in the extract section of your grocery store to get more ideas of your own.
